If you've ever had our old fashioned dry cured bacon, you know how tasty it is! This delightful dry rub is just salt, brown sugar, herbs and spices. No celery salt, no nitrates/nitrites, no curing powders. Our recipe includes dark brown sugar, black pepper, white pepper, bay leaves, juniper berries and fennel seed for a rich and complex flavor. These specialty ingredients also mean that our rub is priced somewhat higher than commercially available rubs that are made with prague powder curing salt. Our dry cure is available in one pound sealed bags and is enough to cure approximately 5 pounds of pork belly or jowl
